I love granola bars, my husband loves granola bars, my kids love granola bars, our dogs love…ok. I’ll stop there. The point is – we love granola bars around here. This recipe is our favorite and so easy to make! You can add your favorite extras, or keep them simple.
Here’s the recipe.
6 cups rolled oats (not quick oats)
4 tablespoons butter, melted (plus more for greasing)
1/4 cup coconut oil
1 teaspoon salt
1/2 cup wheat germ
1/2 cup pecans, chopped (optional)
1/2 cup golden raisins (optional)
1/4 cup sunflower seeds, roasted and salted
1 cup brown sugar
1/4 cup molasses
3 teaspoons vanilla extract
Thoroughly grease an 11×18 baking sheet with butter, or line with greased foil.
Mix together oats, coconut oil, and melted butter, wheat germ, nuts, raisins, and sunflower seeds in a large bowl. Set aside.
In a medium saucepan, combine the brown sugar, honey and molasses. Heat the mixture slowly, stirring until combined. Stir in the vanilla.
Pour the sugar mixture into the oat mixture, stirring as you pour. Stir to combine; mixture will be very sticky.
Press into greased baking sheet and bake until golden brown, about 20-25 minutes.
Remove from oven and let cool. Cut pieces with a sharp knife and remove from the pan.
Optional: Dip the bottom of the granola bars straight into melted chocolate and set on parchment or wax paper until set.
